Steak tips with mushrooms

Serves 2
2 tablespoons grass-fed butter or coconut oil, divided
1 large shallot, thinly sliced
8 ounces sliced mushrooms
1 tablespoon red wine vinegar
sea salt, garlic powder, and black pepper, to taste
1 pound beef tenderloin steak, sliced into 1” cubes
Add 1 tablespoon of the butter or oil to a large skillet over medium-high heat. When hot, add the shallot and mushrooms. Season with dry seasoning to taste.
Saute, stirring occasionally, for 6 minutes or until mushrooms are tender. Stir in the vinegar and cook for 1 minute more. Transfer the vegetable mixture to a bowl.
Return the pan to the heat, and add the remaining butter or oil. When hot, add the steak tips and season to taste. Sear undisturbed for 3 minutes or until golden brown underneath. Flip tips over and cook until the other side is also goldenbrown.
Remove from the heat, then stir in the vegetable mixture. Serve with your favorite sides.
