Aura Bowl

Serves 4

  • 2 tablespoons coconut oil

  • 3 cups cooked wild rice

  • 1 pound frozen cauliflower rice

  • 8 ounce bag frozen chopped asparagus

  • Sea salt, black pepper, and garlic powder, to taste

  • Juice of 1 lemon

  • 2 15-ounce BPA-free cans navy beans, drained and rinsed

  • 1 cup fresh parsley, chopped

  • ¼ cup fresh mint, chopped

  • 2 avocados, sliced

  • 2 scallions, thinly sliced

  • ¼ cup hemp hearts (optional)

  • Large Salad (recipe in Basics)


Add coconut oil to a large skillet over medium heat. When hot, add cooked wild rice, cauliflower rice, asparagus, sea salt, black pepper, and garlic powder. Cook for 10 minutes until vegetables are cooked through, stirring occasionally.

Remove from heat, then stir in lemon juice, beans, and fresh herbs. Serve mixture in bowls topped with avocados, scallions, and optional hemp hearts. Enjoy with Large Salad on the side.
