Lemon & Herb Salad

Serves 1
6 cups baby spinach
1 large cucumber, chopped
2 tablespoons fresh parsley, chopped
2 tablespoons fresh chives, chopped
1 tablespoon fresh oregano, chopped
¼ cup Hummus Dressing (recipe in Dressings)
2 tablespoons grated parmesan cheese or vegan cheese
1 15 -ounce BPA-free can chickpeas, drained and rinsed
Flax crackers, to serve
Add all ingredients (except crackers) to a medium mixing bowl. Toss gently, then serve in two salad bowls. Enjoy with flax crackers on the side.
Omnivore option: Serve with 2-6-ounce BPA-free cans wild-caught tuna
