Lemon & Herb Salad

Serves 1

  • 6 cups baby spinach

  • 1 large cucumber, chopped

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons fresh chives, chopped

  • 1 tablespoon fresh oregano, chopped

  • ¼ cup Hummus Dressing (recipe in Dressings)

  • 2 tablespoons grated parmesan cheese or vegan cheese

  • 1 15 -ounce BPA-free can chickpeas, drained and rinsed

  • Flax crackers, to serve


Add all ingredients (except crackers) to a medium mixing bowl. Toss gently, then serve in two salad bowls. Enjoy with flax crackers on the side.

Omnivore option: Serve with 2-6-ounce BPA-free cans wild-caught tuna
