Herbed Pork Medallions

Serves 4

  • 2 tablespoons grass-fed butter or coconut oil

  • 1 pound pork tenderloin, sliced into 12 medallions

  • 1 tablespoon herbs de provence

  • 1 teaspoon paprika

  • sea salt, garlic powder, and black pepper, to taste

  • ½ cup chicken broth

  • ¼ cup chopped fresh parsley


Add butter or oil to a large skillet over medium heat. When hot, add pork medallions and season with dry seasonings, using tongs to turn medallions over to coat.

Herbed Pork Medallions

Sear medallions on one side for 4 minutes or until golden brown, then flip medallions over. Add chicken broth and parsley to the pan. Cook for 3 to 4 minutes more or until pork is just cooked through.

Enjoy served with your favorite sides.
