Avocado Cream Basil Sandwich

Serves 4

  • 4 slices gluten-free bread, lightly toasted

  • ½ cup organic cream cheese or vegan cream cheese

  • 1 large avocado, sliced

  • 1 large tomato, sliced

  • ¼ cup fresh basil leaves

  • Black pepper, to taste

Spread cream cheese on the toast slices. Layer the avocado, tomato, and basil, then sprinkle with black pepper. Sandwich the slices, then cut each sandwich in half diagonally. Enjoy!

Omnivore option: Add 2 ounces sliced uncured deli chicken to the inside of each sandwich.
